I have a fairly large screen on my PC. I was wondering if I can limit what can be seen by the meeting attendees or will everything be seen what is on screen.

All leading web conferencing solutions offer the so-called application, which allow you to limit sharing to one application window. You may have a look at webex.com, gomeetnow.com, gotomeeting.com.
